Bulgarian Christmas Pumpkin Pie - Tikvenik




Tikvenik is a very delicious and traditional Bulgarian pumpkin Christmas pie. It is easy to prepare with only a few ingredients - pumpkin, crushed walnuts kemels, cinnamon an sugar. Here is the recipe.


  • 1 12 lbs pumpkin (peeled and seeded) or 1 12 lbs any suitable squashed (peeled and seeded)
  • 1 cup sugar
  • 2 ounces walnuts (chopped)
  • 1 teaspoon ground cinnamon
  • 12 lb butter, melted (optional)
  • 1 (1 lb) package phyllo pastry
  • 2 -3 tablespoons caster sugar (for sprinkling)

Method of preparation


Cut the pumpkin or squash into large pieces, pour 100 g of vegetable oil into the pan, add the sugar, cinnamon and mix until the water comes out and does change the color. Then add the walnuts.

Using a brush, peel the phyllo pastry and s
poon some of the pumpkin mixture over it then cover it with pastry. Continue layering the pastry and the pumpkin mix and finish off with a single sheet of dough.

Cut into diamonds and pour with the rest of the fat and bake for 30  minutes.


Let the pie cool down and serve with powdered sugar.
